Reem Kassis | “Cuisine in Context: The History, Evolution, and Challenges of Palestinian Food”

In this Food Literacy for All session, Reem Kassis discussed “Cuisine in Context: The History, Evolution, and Challenges of Palestinian Food.”

The statement below was read in the beginning of class and is also included in the recording:
“The instructional team wants to acknowledge the ongoing genocide in Gaza and ensure that Food Literacy for All is a safe and respectful learning environment for all. As discussions emerge this evening and later in your weekly discussion forums, we will not censor political debate or advocacy for Palestinian rights; but, we will also not tolerate hostility or discrimination against students. Criticism of the Israeli government, policies, and actions is not inherently antisemitic; however, do take care to refer to Israel as the State of Israel as opposed to “the Zionist entity,” “the Jews,” or other euphemisms that might implicitly or explicitly indicate antisemitic ideas. We will hold space for the distinct experiences of pain and trauma that Palestinians, Jews, and oppressed people around the world carry. We also acknowledge that the war in Gaza is a war on food sovereignty. That is why we are so grateful to have Reem Kassis share about the culinary heritage of Palestine with us this evening.”
